This work has been carried out at Microbiology Dept., Faculty of Agric., Damietta Univ., aims to study the counting, isolating and identification of Fungi from Egyptian Ras cheese Romy) during repining period. and studying the biochemical properties of fungal species. Also, studying the effect of volatile oils as natural substances on fungal species. Finally studying the organoleptic properties,physical, chemical and microbiological examinations of Egyptian Ras cheese affected by the proper volatile oils during storage.
